Baked Walnut Cauliflower with Sweet Sauce

Baked Walnut Cauliflower with Sweet Sauce

Ingredients

  • 1/2 cup (2 ounces) California walnuts, ground

  • 1/2 cup gluten free flour (King Arthur)

  • 1/2 cup cornstarch

  • 2 teaspoons baking powder

  • 1 teaspoon kosher salt

  • 1 large head of cauliflower, cut into florets

  • 1/4 cup chili paste

  • 3 tablespoons light soy sauce

  • 2 tablespoons maple syrup

  • 4 cups prepared jasmine rice

  • 4 green onion, sliced

  • 2 tablespoons black sesame seeds

Directions

  1. Preheat oven to 400°.

  2. Place walnuts in food processor and pulse until finely ground. In a medium bowl, mix together walnuts, flour, cornstarch, baking powder and salt.

  3. Add 1-1/2 cups water to create a thin pancake-like batter.

  4. Place cauliflower florets into batter and remove one by one and place on baking sheets lined with parchment. Bake for 30 minutes, checking that edges don’t burn.

  5. In a small bowl, mix together chili paste, soy sauce, maple syrup, and 1 cup water. Pour sauce into a large frying pan stirring constantly until sauce thickens.

  6. Place baked cauliflower florets to skillet with glaze and toss until florets are evenly coated in sauce.

  7. Using a spoodle, make mounds using prepared jasmine rice. Top with black sesame seeds and sliced green onion.
