Baked Walnut Cauliflower with Sweet Sauce

Baked Walnut Cauliflower with Sweet Sauce
Ingredients
1/2 cup (2 ounces) California walnuts, ground
1/2 cup gluten free flour (King Arthur)
1/2 cup cornstarch
2 teaspoons baking powder
1 teaspoon kosher salt
1 large head of cauliflower, cut into florets
1/4 cup chili paste
3 tablespoons light soy sauce
2 tablespoons maple syrup
4 cups prepared jasmine rice
4 green onion, sliced
2 tablespoons black sesame seeds
Directions
Preheat oven to 400°.
Place walnuts in food processor and pulse until finely ground. In a medium bowl, mix together walnuts, flour, cornstarch, baking powder and salt.
Add 1-1/2 cups water to create a thin pancake-like batter.
Place cauliflower florets into batter and remove one by one and place on baking sheets lined with parchment. Bake for 30 minutes, checking that edges don’t burn.
In a small bowl, mix together chili paste, soy sauce, maple syrup, and 1 cup water. Pour sauce into a large frying pan stirring constantly until sauce thickens.
Place baked cauliflower florets to skillet with glaze and toss until florets are evenly coated in sauce.
Using a spoodle, make mounds using prepared jasmine rice. Top with black sesame seeds and sliced green onion.
