Meyer Lemon Chicken Vegetable Orzo Soup (Crockpot Version)
Ingredients:
8 ounce uncooked orzo pasta
6 carrots, sliced
1 large onion, diced
6 stalks celery, sliced
6 cloves garlic, minced
2 beef bouillon cubes
2 teaspoons onion powder
1/2 teaspoon smoked paprika
1 teaspoon ground black pepper
1 tablespoon Worcestershire sauce
½ teaspoon Kosher salt
8 cups vegetable broth
1 pound raw chicken tenders, with tendons pulled
1 cup sweet corn, frozen
1 cup petite sweet peas, frozen
1 10-ounce bag baby spinach
1/2 cup Meyer lemon juice
Directions:
In a large crockpot place all ingredients except orzo pasta, corn, peas, spinach and lemon juice.
Cool on high for 4 hours. Remove chicken tenders and shred meat. Place back in crockpot.
Add remaining ingredients and cook on low for 2 hours.
