Red, White and Blue Quesadillas w/ Red Pepper Filling

Get ready for Memorial Day weekend, 4th of July or a Patriotic summer with this easy, festive quesadilla! Very satisfying for a snack or lunch. 

Blue Corn Tortilla Quesadilla with Red Pepper Filling

Makes 1 serving

Ingredients:

  • 1/4 cup onion, chopped

  • 1/4 cup red bell pepper, chopped 

  • 1 teaspoon extra virgin olive oil

  • 2 blue corn tortillas (8 inch)

  • 1/2 cup shredded Monterey Jack cheese

  • 2 tablespoons nonfat plain Greek yogurt (for topping)

  • 1 green onion, sliced (for topping)

Instructions:

  1. In a small frying pan, sauté the onions and chopped red pepper in oil until tender.

  2. In a medium frying pan, use nonstick spray to lightly coat the bottom of the pan and place the tortilla in the pan and cook for about 1 minute on medium heat.

  3. Sprinkle onion and pepper filling evenly onto the tortilla and then distribute shredded cheese on top of the filling. Layer the second tortilla on top and carefully flip the quesadilla. Cook this side for about 1 minute as well.

  4. Remove from pan and cut the quesadilla into 4 pieces and top with sour cream and green onions.
