Crunchy Granola with Fruits and Walnuts

A rainy day is the perfect time to make a homemade granola so you will have on hand as a hot cereal topper, yogurt stir-in or delicious satisfying snack.

Crunchy Granola with Fruits and Walnuts

Makes 5 cups

Ingredients:

  • 1/4 cup honey

  • 1/4 cup brown sugar

  • 1/4 cup butter

  • 3 cups whole grain oats

  • 1/4 cup unsweetened shredded coconut

  • 1/4 cup dried cranberries

  • 1/4 cup raisins

  • 3/4 cup walnuts, coarsely chopped

Directions:

  1. Preheat oven to 300°F. 

  2. Melt honey, brown sugar and butter  together in a medium saucepan. Stir in oats, coconut, cranberries, raisins, and walnuts and transfer to a parchment-lined baking sheet. Spread into a 1-inch thick layer. 

  3. Bake for 45 minutes or until granola is golden brown.

  4. Remove from oven and let cool, then break into pieces.

  5. Store in an airtight container.
