Blueberry Walnut Oatmeal Cookies

My grandma on my mom’s side grew up on a homestead in Northern Minnesota near Idington, an unincorporated community in Angora township, which is about 80 miles from the Canadian border. Currently my cousins maintain cabins on the property. Annually cousin Sarah goes blueberry picking with her dad Fred. They pick pounds and pounds of these blue gems and recently sent some of the 2020 crop…perfectly frozen. So many recipes to try, but first on the list: cookies! These are easy to throw together and the blueberries add most of the sweetness. A perfect breakfast cookie or sweet with your afternoon coffee.

Blueberry Walnut Oatmeal Cookies

Ingredients:

  • 1/2 cup butter, softened

  • 3/4 cup packed brown sugar

  • 1 large egg, room temperature

  • 2 teaspoon vanilla extract

  • 1 cup old fashioned oats

  • 1 cup all-purpose flour

  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1 cup frozen wild blueberries

Directions

  1. In a bowl, cream butter and brown sugar. Beat in egg and vanilla.

  2. In another bowl, mix together oats, flour, cinnamon, salt, baking soda and baking powder. Slowly add to the creamed mixture.

  3. Gently stir in the blueberries.

  4. Roll dough into golf ball size cookies.

  5. Place onto lightly greased baking sheets about 2 inches apart as cookies will spread a bit.

  6. Bake at 350° for 12-14 minutes or until golden brown.

If your frozen blueberries thaw, you will have blue batter….which is kinda cool!
