Blueberry Mandarin Walnut Salad
This salad has eye appeal and is delicious! A perfect summer side salad or double up as an entrée. This recipe uses simple extra virgin olive oil and a balsamic vinegar blend. It has so many flavors and texture, no need for a fancy dressing.
Blueberry Mandarin Walnut Salad

Makes 4 servings
Ingredients:
2 cups spinach
½ cup Sugar Spice Walnuts
½ cup chickpeas
½ cup mandarins
½ cup blueberries
Directions:
In a large salad bowl toss all ingredients.
Add your favorite dressing.
Mix well and serve immediately. ENJOY!
