Egg Drop Soup with Walnuts
This soup is easy and delicious. Chopped walnuts add texture and omega 3s! Recipe developed
by dietetic intern Lydia Wei and inspired by The Woks of Life Egg Drop Soup
Serves 6
Ingredients:
4 cups chicken stock
½ teaspoon sesame oil
¾ teaspoon salt
½ teaspoon sugar
¼ teaspoon white pepper
½ teaspoon turmeric or
3 tablespoons cornstarch (mixed with 1/3 cup water)
3 eggs (lightly beaten)
2 scallions, sliced thinly
¾ cup of chopped walnuts
Directions:
Bring chicken stock to simmer in large saucepan. Add sesame oil, salt, sugar, white pepper and turmeric, Stir.
Add in the cornstarch and water. Stir the soup continuously and adjust the starch content depending on your preference for thickness or thinness.
Take the lightly beaten egg and slowly stir into soup in a circular motion.
Ladle the soup into bowls and top it with 2 tablespoons walnuts and scallions.
